Penne with Sausage, Red Potatoes, and Green Beans


PENNE WITH SAUSAGE, RED POTATOES, AND GREEN BEANS

8 oz uncooked penne pasta
4 small red potatoes, quartered
8 oz ground sausage
¼ c minced yellow onion
2 small garlic cloves, minced
1 c chicken broth
1 Tbs Olive oil
1 Tbs butter
1 lbs fresh green beans, trimmed and cut in half (or a can of green beans drained)
1 Tbs coarsely chopped fresh parsley –optional
Salt and ground pepper
½ c grated Romano, Asiago, or Parmesan cheese.

1.       Cook the pasta according to package. Drain

2.      Steam the potatoes or boil them in salted water till tender.  At the same time, steam the beans or cook in microwave until tender, 6-12 mintues

3.      Meanwhile, brown sausage in large pot.  Add onion and garlic; cook and stir until the onion is soft and the sausage is completely cooked.  Pour in the broth and simmer for 3 minutes.  Stir in oil and butter until butter melts.  Add green beans, potatoes, and pasta.  Mix well, add parsley and salt and pepper.

4.      Decrease heat to low and sprinkle ½ c of cheese over the mixture.  Cover and cook until cheese is melted.

5.      Serve immediately in same pot or transfer to large shallow serving bowl.  Pass extra cheese to top with.

Yields 4 servings.  Double recipe for larger group.
